Sweet Potato Oatmeal Bread

I knew I could lure some of you food bloggers over here if I combined sweet potato and oatmeal in a recipe. These two foods seem to be very popular in the food blog world. I will admit that I am a fellow lover of both. This recipe is egg and dairy free, so all you vegans can enjoy this one too. This bread was so moist and full of sweet and spicy flavors. (Secret: I used organic baby food for the pureed sweet potatoes. They are already pureed, so I didn’t have to do it.)

Sweet Potato Oatmeal Bread

1 cup oats
1 cup hot water
1/2 cup agave nectar
1 tsp cinnamon
1 tsp pumpkin pie spice
1 cup pureed sweet potatoes
1 cup oat flour
1/4 tsp baking soda
3 tsp baking powder

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine the oats and hot water.
  3. Mix in the agave nectar and pureed sweet potatoes.
  4. In separate bowl, combine oat flour, cinnamon, pumpkin pie spice, baking soda, and baking powder.
  5. Add dry mix to wet mix and stir until well blended.
  6. Pour into a 9×5 loaf pan.
  7. Let stand for 20 minutes.
  8. Bake for 45 minutes.
  9. ENJOY!

That loaf looks simply delicious. My family has fallen in love with quick breads. They made such a nice snack for the kids when they get home from school and I love it that I can sneak good veggies – like sweet potatoes – into their diet without protest.

It was nice to see your little dragonfly in my kitchen :)

This bread sounds fabulously moist and wonderful. I love spicy, homey tasting breads, and this one sounds right up my alley. It looks delicious, and I love your use of the baby food–such a great tool!

I made the bread this weekend- with plenty of alterations, including adding dairy, and it tastes OK. The middle though is still dough-like, even though I left it in the oven for about 45 minutes. Is this the way it should be?

Jennifer- I am sorry it didn’t turn out right.It does turn out moist, but not doughy in the middle. I am wondering if the use of dairy made it a little different. What exact alterations did you make? Krista made it with applesauce, but I think she made it with all the same ingredients otherwise, and it seemed to turn out rigt. I used whole wheat flour (same amount as in the recipe), honey (a little less than the 1/2 cup called for) and no chocolate chips, applesauce (same amount as in the recipe) and no help powder.

What does agave refer to? I don’t know about agave. Is this a flower?
But dish seems very unique flavoured than normal bread.
