
Raise your hand if you are a sweet potato lover! I know many of you food bloggers out there love sweet potatoes, so I should see lots of raised hands. I found this easy recipe in the Vegetarian/Vegan section of About.com. These light and fluffy sweet potato biscuits taste amazing, and they are vegan. The biscuits can be whipped up in a matter of minutes. I used canned sweet potato puree, but you can use fresh cooked sweet potatoes as well. I couldn’t wait for these biscuits to finish baking as the aroma filled the house. I need to go pick up some maple butter. It would be a perfect topping for these pillows of sweet potato goodness.

Sweet Potato Biscuits
Ingredients:
1 cup sweet potatoes, pre-cooked and mashed
1 cup flour
1 tbsp baking powder
1/4 tsp baking soda
1 tsp salt
1/4 cup canola oil
Directions:
- Pre-heat oven to 375 degrees.
- Stir together all the ingredients until well mixed.
- Form the dough into 6-7 biscuits and place on a cookie sheet or baking pan.
- Bake for 15 – 20 minutes, or until done.

About how many sweet potatoes did it take to make 1 cup mashed? Two medium?
Usually a large sweet potato will give you 1 cup mashed, but 2 medium would definitely do it too!

YUM. I am a sweet potato addict, and unfortunately I married a sweet potato phobe. Sad, very sad. Maple butter sounds like the perfect topper, couldn’t you just whip up some softened butter with maple syrup? Oh, my.

Sweet potato biscuits are an old family tradition for me, and I just love them! My version is not quite as good for you, hehe — I add sugar and a whole stick of Earth Balanace!! I’ll give this healthier version a try for sure

Did you find them a little salty? I am thinking I’ll cut the salt in half next time I make these. Usually I love things on the saltier side but thought these biscuits had a little too much. Salt aside, they were SO easy to make and perfect for this time of year! Thanks for the recipe.
