Pumpkin Pie Chex Mix

I was looking for a pumpkin pie recipe, and check out this AWESOME recipe I found over at Pillsbury! As soon as I saw the title of this recipe, I knew I had to make it. The combination of brown sugar and pumpkin pie spice makes this an amazing tasting Chex Mix. For a little variety, I used Honey Nut Cheerios instead of the Honey Nut Chex. Not only is this a wonderful tasting treat, it also smells heavenly! The butter, spices, and brown sugar create a smell that can only make you think happy thoughts….and then want to dive into this delicious Chex Mix full of sugar and spice. This one is definitely going to the office with  me tomorrow to share with everyone.

Pumpkin Pie Chex Mix

Ingredients:

1/4 cup butter

1/4 cup brown sugar

1 tablespoon pumpkin pie spice

2 teaspoons vanilla

2 cups Cinnamon Chex Cereal

2 cups Wheat Chex Cereal

2 cups Honey Nut Cheerios Cereal

8 oz pecans

Directions:

1.  In small bowl, mix brown sugar and pumpkin pie spice; set aside. In small microwave-safe dish, microwave butter on High about 30 seconds or until melted. Stir in vanilla. In large microwavable bowl, mix all cereals and pecans. Pour butter mixture over cereal mixture, stirring until evenly distributed. Add sugar and spice mixture and stir until coated.

2.  Microwave uncovered on High 5 minutes or until mixture begins to brown, stirring every minute. Spread on wax paper or a cookie sheet to cool. Store in airtight container.

I’m just not a savory Chex Mix fan, but I LOVE anything with pumpkin. So this sounds amazing!

Hmmm, while on the surface, I feel like I should agree with Mimi’s comment, I’m really having trouble picturing these two flavors together. I love* Chex Mix and I love pumpkin. But I also love beer and Special K and I don’t think I’d put those together. Still, I may have to try this, simply in the name of science. :)

* love is an understatement.

I’m wondering if baking in the oven instead of microwaving would work. Any thoughts?

I think it would work just fine, just not sure what temp and how long to bake it

This sounds AMAZING!!! Do you think it would work with margarine? Like Doris, my family does not love pumpkin, so I would end up eating THE WHOLE THING! I would love to make it a TINY bit more healthy:) . Thanks for ALL of your yummy recipes!

Sound’s absolutely delish. Why is everyone so worried about the butter?? The whole thing is totally fattening, not so healthy & full of sugar, if you want it to turn out great 1/4 cup of butter shouldn’t bother you !?!?
