Pumpkin Coconut Chocolate Chip Bars

And……the pumpkin fun continues with a healthy pumpkin bar recipe. I adapted this recipe from one I found on FitSugar. These bars can easily be made vegan by using an egg substitute and dairy free chocolate chips. Of course, I couldn’t wait for the bars to cool before I sampled them, and I wasn’t disappointed. They were bursting with a wonderful blend of pumpkin, chocolate, and coconut flavors. What a delicious combination!!

Pumpkin Coconut Chocolate Chip Bars

Ingredients

2/3 cup sugar
1/2 cup unsweetened applesauce
1 egg or vegan egg substitute equivalent
1 can pumpkin
1 cup whole wheat flour
3/4 cup rolled oats
2 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp pumpkin pie spice
1/2 cup mini chocolate chips
1/4 – 1/2 cup shredded coconut

Directions

  1. Mix sugar, applesauce, egg, and pumpkin until well blended.
  2. Stir in flour, oats, baking powder, baking soda, spices, and chocolate chips.
  3. Pour into a prepared 13 x 9 inch pan. Spread it out evenly with a spatula. Sprinkle on the coconut.
  4. Bake at 350° for 25 to 35 minutes. Cool in pan completely before cutting into bars. Enjoy!

YUM!!!! This looks amazing…the coconut is a nice addition, one I normally wouldn’t have thought to pair with pumpkin.

These look CRAZY good, and they’d be perfect for my 80 calorie after dinner dessert. I calculated it all out, aaaannnd if you cut this recipe into 18 squares then you will have 80 calories worth of bars (Well, without the coconut because I omitted it.). YUM (the suggested 24 servings by the way clocks in at around 64 calories if anyone was wondering…but again, without the coconut)

These are AWESOME!!! I made them today and it was all I could do to wait for them to cool to cut into them!!! I didn’t have mini choc chips so I used 60% dark choc chips. They turned out GREAT!!! Thanks!

These are my new favorite pumpkin treats. I used 1/4 cup egg beater to further reduce the calories. I have made them twice in the past week, once for my health-conscious friends, and once for my office. No one had any idea that they were so healthy because they taste so good! Thank you!

These are amazing. And by the way, when you make them with no coconut and slice it up into 24 pieces, each piece is just 1 Weight Watchers point! Yay!

I love this recipe. It would be helpful to put what size can of pumpkin. I used the 15 ounces and am wondering if there should have been more?

Megan, these look delicious. I’m wondering what size can of pumpkin did you use? 15oz or 28 oz? 28 oz seems excessive, but I just wanted to make sure.

I made them yesterday – such an easy recipe! I added 1/2 cup walnuts. Absolutely delicious! I shared them with my mah jong club – I always try to bring a vegan dish to share with them to show them how wonderful vegan goodies can be. The ladies loved them!

Pumpkin Coconut Chocolate Chip Bars are extremely addicting to it. I ate to many and got the worse tummy ache but at least it tasted good.
