Protein Power Pumpkin Cookies

I have been wanting to create a snack that satisfies my sweet cravings and provides me with some protein. I threw together some ingredients and created this soft and chewy cookie. These would be perfect for breakfast, snack, or dessert! I used vanilla rice protein powder and Enjoy Life chocolate chips in my cookies, but you can make them with any flavor/type protein powder and any other mix-ins that you desire.

Protein Power Pumpkin Cookies
1 cup pumpkin
1/4 cup applesauce
1/2 tsp. cinnamon
1/2 tsp. pumpkin pie spice
2 tbsp protein powder of choice
1 tbsp agave nectar
1/2 cup mini chocolate chips
2 cups rolled oats

Preheat oven to 350 degrees. Combine all the ingredients in the order listed. Mix until well combined. Drop cookies onto baking sheet and press down slightly. Bake for 15 minutes. Makes approximately 12 cookies.

These look so amazing–I wish I had the recipe around Thanksgiving time when I was struggling with what to do with pumpkin! I ended up making up my own oatmeal pumpkin cookies but they were horrible :(
I’ll save this one for next time!

I am really loving the fact that this is healthy and tasty! What makes the chocolate chips different are they sugar free? See my husband and I are on a diet and we are trying to find ways to *coughs* have are cake and eat it too. But often times I find that light foods tastes not that great.

Are these flourless? I don’t see flour listed as an ingredient…

They sound great. I like baking with protein powder more than I like drinking it in a shake. I want to make these, but I also want to make everything you’ve made so they will have to go on the waiting list!

Those cookies look so good. I love when cookies have a secret ingredient like protein powder. These would make a great pre-workout snack! Then I could say I’m eating a cookie before the gym and people would be jealous ;o)

It’s pretty awesome having nutrition as my life. I always tell people when they ask me what kind of supplements to take. Start with the basics and get some whey protein as a body building supplement then if you want, try an EFA stack for weight loss. As always throw in a multivitamin.
