Personalized Pumpkin Cookies

And it begins….here is the first pumpkin recipe for Pumpkin Season 2009. If you love soft baked cookies, these pumpkin cookies are for you. This recipe is vegan, and can be customized to create flavor combinations to please your personal taste buds. I kept it simple and made one batch with mini chocolate chips, and one batch with white chocolate chips. I thought of several flavor combinations that might by tasty: cranberry-walnut, white chocolate-macadamia nut, raisin-walnut, butterscotch chips…..What add-ins would you use to personalize your pumpkin cookies?

Personalized Pumpkin Cookies

Ingredients:

2 cupsĀ  Whole Wheat Flour
1 1/3 cup Rolled Oats
1 tsp. Baking Soda
3/4 tsp. Salt
1 1/2 tsp. Pumpkin Pie Spice
1 2/3 cup Sugar
2/3 cup Canola Oil
2 Tbs. Maple Syrup
1 cup Canned pumpkin
1 tsp. Vanilla Extract
1 cup Add-ins of Your Choice

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients in a large bowl.
  3. Place tablespoons of dough on cookie sheet prepared with nonstick spray.
  4. Bake for 16 minutes. Cool and Enjoy! (Makes 30 cookies)

Ha ha… I was expecting to see cookies that said “Megan” on them. Maybe that’s what I would add… some white chocolate icing, maybe even spelling out our name! And definitely chocolate chunks… probably bittersweet.

ohhhhh pumpkin cookies, I love pumpkin anything and that’s one of my favorite things about the fall season. I think I would add some caramel chips or peanut butter chips yummmmmy!

These look great, Megan! Now that it’s almost Fall, I can’t get enough pumpkin, cinnamon and apples. Any suggestions for what I should do with leftover pumpkin pie filling? I mistakenly thought I was buying canned pumpkin…oops! As always, thanks for sharing!

Oh no…reading this post on an empty stomach and suddenly craving cookies. They look deliciously amazing. My fave add ins? Don’t judge, but pretzels (all broken up) and toffee pieces. Maybe not all at once. Or maybe all at once. Crunchy, gooey yumminess.
