Muffin Mix Cookies

by megan on April 23, 2009

This recipe is easy and very versatile. The original recipe used a Jiffy muffin mix, but I used Betty Crocker’s Chocolate Chip Muffin Mix. I also decided to heat up some chocolate frosting in the microwave for 30 seconds, and drizzle it on top. These cookies are extremely soft. I almost hesitate to call them cookies, because to me they are like mini muffin tops. I think I might make some Banana Nut Muffin Cookies next time. What flavor muffin mix would you use?

Muffin Mix Cookies
1 package muffin mix (16.4 oz)
4 Tbsp. milk

2 eggs

4 Tbsp. margarine or butter, softened

Directions:
Preheat oven to 350°.
Combine all ingredients and blend well.
Drop by spoonful onto baking sheet.
Bake
10–12 minutes.
Remove from baking sheet while still warm.

Makes 24 cookies.

Nothing wrong with mini muffin tops! In fact, you can get a muffin top tin – very cool.

YUM! Soft cookies pwn all–screw the crunchies!

Know what’s CRAZY about mixes? You don’t actually need eggs, oil, water, or ANYTHING. All you need is a can of diet soda! My friend and I didn’t believe it and made a gingerbread cake with it…it came out so good. I don’t know if it would work for cookies, but I don’t see why not.

I love muffin tops! They look so delicious and pretty with the frosting over them. I think I could go for some blueberry ones.

I just made these. For the first batch I forgot to add butter, and they were AMAZING.
I added butter to the second batch, and they were still pretty good, but without butter… I dunno. It was a nice mistake though.

i used the banana nut mix and added some oatmeal and peanut butter. they are alright but i should have just stuck to your recipe. they probably would have been alot better..
