Homemade Chocolate Chip Protein Bars

I am always looking for a good homemade protein bar. I found this recipe at vegweb.com and made my own personal substitutions/changes. I substituted oat flour and soy milk, and added a little baking powder. I was very happy with the results. These bars are packed with protein, they are full of flavor, and they have a soft, chewy texture. They would make great snacks before or after a workout, or they could be eaten as a healthy dessert/snack.

I used Nutribiotic Vanilla Rice Protein Powder, which is my favorite protein powder, and it is vegan. I add it to my oatmeal every morning. I am curious to know which protein powders you all use? Do you have a favorite kind? Are there any protein powders that you have tried that you absolutely do not like?


Chocolate Chip Protein Bars

1 cup vanilla rice protein powder
1/2 cup oat flour
2 cups rolled oats
1/2 cup oat bran
2 tsp baking powder
1/2 teaspoon cinnamon
1/3 – 2/3 cup organic sugar
1 cup dairy free chocolate chips
1 1/2 cups vanilla soy milk
1/4 cup canola oil
2 teaspoons vanilla

Preheat oven to 350 degrees. Lightly spray a 9 by 13-inch baking pan.
Mix together the protein powder, flour, oats, oat bran, and cinnamon in a large bowl.
Add in the sugar and chocolate chips.
Combine the soy milk, oil, and vanilla in a separate bowl, stirring well.
Add the wet mixture to the dry and mix until thoroughly blended.
Transfer the mixture to the prepared 9 by 13-inch pan, patting it evenly into place with your hands.
Bake for 30 minutes.
Remove from oven, cool, and cut into bars of any size.

These protein bars look delicious! I hate paying the high prices for them in the store. I’ve got some protein powder in the pantry that I need to use up. I never thought to add it to oatmeal. Great tip!

I think soy protein is pretty good, but I recently lost my taste for whey protein. In fact, I have a canister about 3/4 full that I’m trying to get rid of! Anyone want it? See my latest post for details

Fantastic! I should make these…I thought about buying some bars at the store earlier this week…but too expensive, I figure I’ll make my own for awhile. And these look like a good possible contender!

YES! You have made me SO HAPPY, because those Hot ‘n Healthy bars are my absolute FAVORITE, but not only can I not find them in Minnesota but they’re so freaking expensive! I love you, Miss Meg.

I haven’t tried protein powder before, but I’ve been thinking about trying it. I like to make smoothies for breakfast, and I think protein powder would help them keep me full longer…

What a fabulous idea! John and I spend wayyy too much money on protein bars. He’s super picky about nutritional stats, I’ll have to calculate these out and see if he’s in to sub these in! We use chocolate protein powder but I’m sure that will make these taste good too! Either way, I’m making them for me to eat!!

I won’t ever buy protein powder, though I have been tempted. I see it as an an unnecessary waste of money. I do like these vars though- look yummy! What can I use instead of canola oil?

Jennifer-
I use protein powder because I tend to eat lots of veggies and grains and don’t get enough protein. I try to use only all natural powders.

You can use softened margarine in place of the oil or if you want to use applesauce or mashed bananas you could…it would just make them softer.

Those look delicious! I really love the idea of homemade protein bars because they’re so much more economical and way better tasting. I’ve never heard of your protein powder, but that’s probably because I live in Lubbock ;) I get the GNC soy kind in chocolate and vanilla and I really like it!

It’s pretty awesome having nutrition as my life. I always tell people when they ask me what kind of supplements to take. Start with the basics and get some whey protein as a body building supplement then if you want, try an EFA stack for weight loss. As always throw in a multivitamin.
