It was Peabody’s birthday last week, and she made these wonderful cheesecake treats to celebrate! I remember how happy the colors and sprinkles of Circus Animal cookies made me when I was little. The same happy smile came to my face when I saw the fun colors bursting out of these cheesecake cupcakes!
