Hill Country Pie

by megan on February 14, 2012

Look what was discovered on the road trip in the Hill Country of Texas!!! That mile high slice of pie is Caramel Cream Meringue! Can you believe how tall it is?!

I found this piece of pie at the Koffee Kup located in Hico, Texas. I have passed this little cafe several times on past trips, but never stopped. I sure have been missing out! The cafe offers 16 varieties of homemade pies including the following:

Coconut Cream

Chocolate Cream

Peanut Butter Cream

Lemon Cream

Caramel Cream

Black Forest

Banana Blueberry

Reese’s Pieces

Egg Custard

Apple

Pecan

The Caramel Cream Meringue pie was tasty, but the Blueberry Banana pie won the taste test! How can you go wrong with bananas in a sweet cream cheese filling topped with blueberries? YUM!!!

What is your favorite kind of pie?

Wow, I’ve never seen that much caramel in one slice of pie. That looks seriously good. If I had a piece of that, my mind may change, but as of now, my favorite pie is coconut custard. That is unless it comes from my favorite local pie shop, then it would be sour cherry pie.

All pie! You can not go wrong with pie. On Thanksgiving, I always go with Pumpkin Pie, but taste test the apple, rhubarb, chocolate, oatmeal cookie… I love sweets!

•1/8 teaspoon dried oregano
•1 pound lean ground beef (90% lean)
•FILLING:
•1-1/2 cups tomato sauce
•1-1/3 cups instant rice
•1 cup (4 ounces) shredded cheddar cheese, divided
•1 cup water
•1/2 teaspoon salt

Directions
•In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well. Press onto the bottom and up the sides of a greased 10-in. pie plate.
• In a bowl, combine the tomato sauce, rice, 1/2 cup cheese, water and salt. Spoon into meat shell. Cover and bake at 350° for 25 minutes. Uncover; sprinkle with remaining cheese. Bake 15-20 minutes longer or until cheese is melted. Let stand for 15 minutes before cutting. Yield: 6 servings.
