Halloween Cupcake Fun

I couldn’t wait any longer ! I had to make some Halloween cupcakes! I tried a new idea that I have seen floating around the Internet: adding pumpkin to chocolate cake mix for a moist chocolate cupcake/muffin! The results were delicious and lower fat than using oil and eggs! Of course, I cancelled out any low fat qualities of these cupcakes by adding frosting…oh well!! I used Pillsbury’s Halloween frosting and some fun edible images I bought at Target. I plan to take some of these to work for the kids to enjoy tomorrow!

Yum, I’ve been known to keep the icing off and eat them as muffins for breakfast. :) I guess that’s why I’m on a healthy makeover!

I’ve tried cake mix and pumpkin before in muffin form and have never been let down!

Those cupcakes will make you the coolest among those kids, Meg! So much better than the store-bought ones, especially because they’re made with PUMPKIN!! Haha, I’m so glad you included that crucial ingredient ;o)

I love your cupcakes! I found a magazine article about halloween cupcakes right after the holiday last year & I cannot wait to make them!!!

Sadly for me, I'm on a "creativity restriction" until after this Saturday when I take the GMAT. You've totally inspired me to make them right away, though!

I love adding pumpkin to cake mix! :) another great idea is adding a can of diet soda… diet dr pepper with vanilla or chocolate cake mix tastes great! :) Sounds weird but it totally works! I’m also all about making cake mix in single servings in the microwave… haha fills a cake craving quick!

I love using pumpkin in place of the oil and eggs, no one can ever tell and they are a little better for you. Your halloween cupcakes look fab!
