Granna’s Cookies: Toffee Chocolate Chip

Yesterday would have been my Granna’s 89th birthday. She passed away last October, and I have wanted to do a blog post in her honor ever since. Christmas was hard without her, and it was hard to not be able to call her on her birthday. That didn’t stop me from celebrating an amazing woman on her birthday. Every Christmas, we gave my grandmother English toffee. It was her absolute favorite candy. I had a bag of Heath English toffee bits, and I added those to a basic chocolate chip cookie recipe. I also added a little espresso powder because she definitely loved her morning coffee :) These cookies turned out wonderfully, and I know she would have enjoyed them. I definitely enjoyed quite a few for her.

Granna’s Cookies: Toffee Chocolate Chip

Ingredients:

2 1/4 cups all purpose flour

1/2 tsp salt

1 tsp baking soda

1 tsp espresso powder

1 cup (2 sticks) butter, softened

3/4 cup granulated sugar

3/4 cup light brown sugar

1 tsp vanilla extract

2 eggs

2 cups (12 oz) chocolate chips

1 bag (8 0z) Heath English Toffee bits

Directions:

1. Heat oven to 375°F.

2. Stir together flour, baking soda, espresso powder, and salt. Beat butter, granulated sugar, brown sugar and vanilla in large bowl with mixer until creamy. Add eggs; beat well.

3. Gradually add flour mixture, beating well. Stir in chocolate chips and Heath toffee bits. Drop by rounded teaspoons onto ungreased cookie sheet.

4. Bake 8 to 10 minutes or until lightly browned. Cool slightly; remove from cookie sheet to wire rack. Cool completely.

5. Enjoy!

Those sound SO good, Megan! I’m definitely going to give them a try! Sorry about your Granna, but so nice of you to continue to celebrate her and carry on her memory. :)

Your grandmother had great taste – toffee is my fave! What a special way to honor her. I lost my grandma 12 years ago, and she loved the fall season, so I made pumpkin muffins this past autumn in honor of her. So many memories came back, as I’m sure they did for you.
