Lisa Jameson September 14, 2009 at 6:24 pm

My favorite fall recipe is a Sheperd’s Dip.

One loaf of round bread….preferrably not sour dough, but it will do in a pinch.

8 oz cream cheese
1 cup grated sharp cheddar cheese
1 bunch of green onions finely chopped
1 can archer chipped beef (in the canned meat aisle at the grocery store) sliced
1 tsp Worchestershire Sauce (not sure if I spelled that correctly).
1 tsp Garlic Salt

Soften the cream cheese in the microwave until it is easily stirred, then add all of the remaining ingredients and stir until they are mixed in and the dip is creamy.

Cut a whole in the top of the bread and scoop out the bread inside to make a bread-bowl. Save the crumbs to use in the dip.

Bake inside the bread bowl at 350 for about 30 minute or until the dip is warm and bubbly.

Serve with toasted bread crumbs or bagel chips for dipping.

YUMMMMMMM!!!!!!!!!!!

hmmmmmmmmmm.? probably acorn squash? orrrrrr something with apples and pumpkin!!!!!!!!

rhodeygirl September 16, 2009 at 12:05 pm

My favorite fall recipe is a simple one. Baked apples. Delicious. I like to core an apple and leave it whole or chop it up into small pieces, based on my mood. Then I add lots of fall spices like cinnamon and pumpkin spice. Just a teeny bit of brown sugar on top to caramelize it a little and then I bake it until it makes my whole house smell like a crisp fall day.

It always reminds me of going apple picking and then coming home and making apple pie with my mom. It also reminds me of this great place we go to eat at in New Hampshire when we go skiing called The Common Man. I love food that brings back memories.

rhodeygirl September 16, 2009 at 12:07 pm

The taste is sooo much better than pumpkin pie with canned pumpkin (which is very good in itself!). I know it’s not the healthiest recipe in the world, but it’s very nice as a holiday treat! :)

My favorite fall recipe is mexican cornbread casserole: it’s a layer of cornbread mix, browned ground beef, onions, corn, jalapenos, cheese; then covered with another layer of cornbread mix. It comes out of the oven so cheesy and delicious. It’s not health food by any means; so I have a small square with a heap of green beans on the side. Yum!
