Chocolate Chip Blondies and a Cookbook Giveaway

Thanks to Jane Doiron, I received a copy of her cookbook Make Ahead Meals For Busy Moms. I was so excited to look through all the recipes and decide what I would make first. The cookbook is filled with so many wonderful easy to make recipes, but I kept going back to the Chocolate Chip Blondies. I had all the ingredients on hand, mixed them up, and the blondies were in the oven within 15 minutes. I drizzled a little extra chocolate on top when they came out of the oven. As I expected, they were delicious. They are very rich and chocolatey!

Jane has offered a copy of her cookbook to a lucky winner! The cookbook is full of recipes such as Pizza Bites, Taco Dip, Lemonade Cake, Overnight Pancake Mix, BBQ Pepper Jack Chicken, Taco Lasagna and many more family favorites. Every recipe is simple to prepare, easy to make ahead of time, and easy to freeze to eat later.

My fave easy to make meal is salad. Throw in some spinach leaves and mixed greens and anything else I have lying around like eggs, beans, tofu, carrots, cheese, onions, oil, vinegar, etc. Quick and healthy too!

I like to quickly roast whatever veggies we have on hand, toss them with whole-wheat pasta, and add a few mini meatballs and lots of grated parmesean. (I make the meatballs in huge batches and freeze them)

When I’m short on time, I take a few fresh mozzarella balls, sprinkle a little s & p on them, cover them with EVOO and add some roasted red peppers. It’s my favorite no-cook meal that’s filling and delish!

My favorite homemade meal that is quick is crockpot soup – I usually just put in whatever veggies we have on hand and set it on low in the morning and at night when it is dinner time about 15 minutes or so before I throw in rice or pasta and turn to high – instant dinner with NO effort!

Yum on the blondies! My favorite go-to very, very fast meal is an egg sandwich. I love adding different things to change the flavor, and can whip one up in about 2 minutes flat. My most recent favorite topping is putting jelly on the toast.

One of our fast, easy meals is hamburgers, even when it’s too cold outside to grill, we make them indoors because everyone loves them. The nice thing about burgers is you can flavor them up lots of ways!

I alway keep Spaghetti stuff on hand for that go to meal, but I also like filling the crockpot in the morning with meat and veggies and then leaving and coming home to supper all ready to eat. That is the best supper for me! I would love to win this cookbook!

Yum! Our go to quick and easy is rice with a sauce (cheese, alfredo, spaghetti), hamburger or chicken and a vegetable. Lots of different easy things and we usually have steamed rice on hand so very quick!

My go to meal is some frozen okra cooked with a can of rotel – while those are cooking I throw some salmon or a tuna steak in the oven and take a shower…everything is done by the time I get out! Perfect!

Quesadillas have become my go-to cheap and easy meal. I love the way I can just throw little leftovers in a tortilla and it becomes a meal!

I love using my crockpot for fast and easy dinners…one of the best is chicken with a packet of taco seasoning and a can of cream of mushroom soup and a cup of salsa on top…after a long day just take off the lid and voila! Great served over rice.

My favorite “go to” meal is enchiladas…Hormel Beef Roast, El Paso Soft Taco Kit, 2% Colby Jack Cheese, and some chopped jalapenos. I put the taco seasoning into the au jus from the roast. Roll up the enchiladas, cover with cheese and chopped jalapenos. Low broil for about 10 minutes. 4 Minute Microwave Mexican Rice…Yum!

I like to make spaghetti and then with the leftovers the next day I get french bread and make garlic bread and put the spaghetti on top and put a slice of cheese and bake it. Yummy!

easiest is ground turkey sloppy joes!
ground turkey from jennie o , mixed with a can of manwich served on an arnold sandwich thins. for sides, we boil some peas and and broccoli, salt and pepper and we have a meal with 2 veggies!!!

Go to meal- bag of frozen veggies {corn, carrots, peas….), can of cream of chicken soup- mix, place in 13×9 pan. Cover with canned biscuits {I “smush” them first”} bake according to directions on can of biscuits… Oila! You have yourself chicken pot pie… kind of. It tastes good anyway!

my go-to quick meal is an egg sandwich. i either scramble an egg, or make an egg over-easy, put it on an arnold’s sandwich thin with some hot sauce and some cheese, and grab a piece of fruit to have on the side. delicious, easy, and filling!!

Seriously, I’ve done that but my go to meal is a quick salad with grilled chicken. I’m a lot like the mailman, neither sun or snow or rain…etc will keep me from my grill. Greens, grilled chicken, toasted pine nuts and strawberries or raspberries or peaches w/raspberry balsamic dressing…so fast, so good and no pans to clean!

My favorite go to meal is actually a healthy version of nachos…I used baked tortilla chips, canned black beans, olives, tomatoes, salsa, low fat shredded cheese, and whatever leftover veggies I have in the refrigerator. Simple, quick, and covers all of your bases (veggies, protein, and salsa!) ha!

My go-to recipe is stir fry. I usually have the veggies on hand, and whipping up a sauce is a cinch! The whole mean usually only takes 10-15 min, so its perfect for those nights when you want a good meal but are short on time.

I like to make grilled cheese on a good wheat or ciabatta bread, with pesto, gourmet cheeses and fresh basil and tomato from my garden. In the winter I use my homemade frozen pesto and some homemade canned tomato sauce.

My fast meal has recently become Goulosh. (I don’t know how to spell that) My 4 year old daughter who usually will only eat “clean” or “naked” noodles, has decided that Goulosh with the meat and sauce is great, so with it’s 3 ingredients it’s the one I go to!

My go-to meal on a busy night is only 3 ingredients… frozen chopped spinach, sweet turkey sausage and puff pastry. When it hits the dinner table as spinach-turkey puffs, everyone digs in… and it only took me maybe 25 minutes!

When my kids were young, their favorite go to meal was mac n’ cheese and barbecued kielblasha sausage. Today, I still prepare that for my husband and I occasionally. The blondies look wonderful. My go to dinner is homemade sloppy joes. Brown the ground beef and onions, add tomato sauce, brown sugar, vinegar, BBQ sauce, worchestershire sauce. Simmer about 15 minutes and serve with homemade slaw. Takes no more than 1/2 hour.

Omelets are easy and clean the fridge out beautifully. I put out left overs and cheeses and everyone customizes their own omelet. Add toast(whole grain) and a fruit. Healthy and yummy!

I haven’t had blondies in forever!! Yummy :-) My go to fast meal would have to be shepherd’s pie–it looks like it takes forever, but even easier when you use pre-made mash potatoes.
