Cheesecake Brownies with Caramel Waffle Cone Topping

The idea for these brownies came together during a run with a friend. We decided that waffle cones and caramel would be fun additions to cheesecake brownies. I was very happy with the results! These brownies are very rich and will cure any chocolate or sweet craving. I used Ghiradelli Double Chocolate Brownie Mix, which probably tripled the richness level. The waffle cones added a great flavor, but did lose some of their crispness over time. If anyone has any suggestions on how to avoid that…let me know.

Cheesecake Brownies with Caramel Waffle Cone Topping

Ingredients:
1 package of your favorite brownie mix
1 (8 ounce) package cream cheese, softened
2 tablespoons butter, softened
1 tablespoon cornstarch
1 (14 ounce) can sweetened condensed milk
1 egg
2 teaspoon vanilla extract
5 waffle cones, crushed
1 jar caramel sauce

Directions:

  1. Preheat oven 350 degrees. Prepare a 9×13 inch baking pan with nonstick cooking spray.
  2. Prepare brownie mix according to the directions on the package. Spread into prepared baking pan.
  3. In a medium bowl, beat cream cheese, butter and cornstarch until fluffy. Gradually beat in sweetened condensed milk, egg and vanilla until smooth. Pour cream cheese mixture over brownie batter.
  4. Bake in preheated oven for 45 minutes, or until top is lightly browned.
  5. Immediately top with crushed waffle cones, slightly pressing them into cheesecake layer.
  6. Drizzle caramel topping evenly over the top.
  7. Cool and enjoy!

    Ridiculously awesome and easy! Now what you need to do is bake the cheesecake brownies inside the waffle cones!

    OMG! They look so decadent and hard to resist! I doubt they would last long enough in my house for the waffle cones to lose their crispness! ;)

    I just made these last night. Very very good. You could add coconut if you like, or I thought of using crushed oreo cookie crumbs on top instead of waffle cones just for a change.

    Add a piece of bread to the container your keeping the brownies in. It keeps cookies soft and keeps crunchy things hard.
