Cake Mix Cookie Love!

by megan on January 19, 2012

Cake mix cookies are some of my absolute favorite cookies to make and eat! They are so easy to make and so versatile. You can really create so many cookie varieties and decorate them in so many ways. Tonight, I used Betty Crocker’s Triple Chocolate Fudge cake mix and topped it with chocolate icing and sprinkles. One of my other favorite versions to make is Cookies and Cream Cake Mix Cookies. It is also fun to use the Funfetti cake mixes during the Holidays. I have made Funfetti Christmas Cake Mix Cookies in the past and plan to make Funfetti Valentines Cake Mix Cookies this year.

Triple Chocolate Fudge Cake Mix Cookies

Ingredients:

1 package Betty Crocker® Triple Chocolate Fudge cake mix
1/4 cup vegetable oil
2 eggs

Directions:

  1. Heat oven to 350°. Lightly grease cookie sheet with shortening or spray with cooking spray.
  2. Mix cake mix, oil and eggs in large bowl with spoon until dough forms (some dry mix will remain).
  3. Scoop level 1 measuring tablespoons of dough onto cookie sheet about 2 inches apart.
  4. Bake  10 minutes or until cookies begin to look dry and cracked on surface. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely, about 20 minutes.
  5. ENJOY!!
