Boston Cream Pie Cupcakes

I had so much fun making these Boston Cream Pie Cupcakes. The recipe is from the cookbook Vegan Cupcakes Take Over the World, so I can’t post it here…sorry! I was so excited when I won this cookbook from Nicole @ Another One Bites the Crust, and I knew that I had to try these creamy treats first. The vegan pastry cream inside these cupcakes is delicious. Nobody would ever guess that it was made using tofu! Not only was this my first time to use tofu in my baking, it was also my first time to make chocolate ganache. I was surprised how easy it was to make. It only involved three ingredients: soy milk, semi-sweet chocolate, and maple syrup. I will definitely have to incorporate ganache in more of my recipes.

Looks wonderful! It’s amazing how versatile tofu is.
I love filled cupcakes. It breaks up the dryness of cake (I’m not a big cake person).

Wow those cupcakes look GREAT. I love Bostom Cream and I especially love when cupcakes have filling. Not enough do!

These are one of the few cupcakes I haven’t made from the book! For some reason, I always thought they’d take a lot of work! I need to get on that.
