Black Beans and Rice with Pumpkin Vinaigrette

If you love beans and rice, you have to try this unique dish. I found a recipe for pumpkin vinaigrette and decided it would taste good with black beans. All the flavors blended so beautifully. I topped mine off with some chopped cilantro! This dish would be good hot or cold. I can’t wait to have the leftovers, because I know the flavors will be even better after marinating longer together.

Black Beans and Rice with Pumpkin Vinaigrette
4 cups cooked brown rice
2 cups black beans
4 Tbs Pumpkin Puree
1/4 cup Balsamic Vinegar
1 Clove Garlic
1 Tsp Sugar
1/2 Tsp Salt
1/8 Tsp Black Pepper
1/2 Cup Olive Oil
Directions:
Finely chop or mash the clove of Garlic.
Put all ingredients except the Olive Oil into a bowl.
Whisk all ingredients together.
Mix well.
Add Olive oil and whisk well.
Combine rice, beans, and vinaigrette and mix well.

I haven’t had black beans in awhile! This sounds like the perfect recipe to break them out again!

Black beans and rice is the cheapest way to get a healthy meal but it’s also so delicious every time. Pumpkin vinaigrette sounds quite interesting…

No offense but I am going to try it as a vinaigrette… that way I can keep if for Christmas and use my pumpkin I grew… just to impress my visitors.
